There is a category of food that I know as “good-gross.” Good-gross varies from person to person. This type of food tastes good in the moment and makes you feel, this is so obvious, gross after it’s consumed. For me, the pinnacle of good-gross are those neon orange puffed cheese things. The more ghetto the brand the better. This recipe has the aura of good-gross, but doesn’t turn out that way because, while it has the look of something processed, it’s not. It is pretty heavy, however, so I’d think about serving it with a green on the side.
I modified Joy of Cooking‘s Hot Chorizo and Cheese Dip to make it into a one dish meal instead of an appetizer. It’s like I un-fancied it.
Ingredients
- 1 pound chorizo sausage, sliced into 1 cm pieces (apparently casings are supposed to be removed, but I never remember)
- 1/2 cup green onion, chopped
- 1 tbsp flour
- 1 cup milk
- 3/4 cup cheddar, grated
- 1/4 tsp salt
- 6 tortillas, sliced into strips
- Extra cheddar cheese and green onions for the topping
Method
- Cook chorizo in a saucepan over medium heat.
- Once it almost cooked add the green onions.
- Continue to cook until you stop worrying about poisoning your family it’s cooked through.
- Stir in flour and mix until it looks like you haven’t stirred in flour.
- Slowly add the milk a little at a time, allowing it to thicken.
- Once thickened add salt and be glad that you didn’t accidentally make a chorizo soup.
- Layer 1/3 of the tortillas in a casserole dish and add 1/3 of the chorizo goodness. Repeat 2 more times.
- Top with extra cheese and green onions.
- Bake at 375 degrees Fahrenheit for 25 minutes.
This is the kind of dish that I almost makes me wish that I had a reason to be really sad so I could eat an entire casserole dish to myself (it usually serves 4). So far, it’s only been rainbows and ponies around my house lately so no comfort food for me. Here’s to hoping that Ryan cheats on me!
